Instructions:
- Preparation: Gather all your ingredients and equipment before starting. Choose your desired toppings, which can include a variety of proteins like chicken, seafood, chorizo, or vegetables.
- Seasoning the Pan: Heat a generous amount of the extra virgin olive oil in the enameled pan over medium heat. Pro Tip: Layer the pan with Diamond Foil Non-stick to easily achieved that crispy rice at the bottom without having to worry about washing later.
- Sauté the Rice & Toppings.
- Sautee the vegetables until lightly brown
- Add the bomba rice to the pan, stirring it to coat it evenly with the seasoned oil. Toast the rice for a couple of minutes until it becomes translucent at the edges.
- Add the spice seasoning and allow it to infuse releasing its aromas and flavors, stir for 1-2 mins.
- Adding Liquid: Add water or your choice of broth. The liquid should just cover the rice.
- Cooking:
- Spread the rice and liquid evenly across the pan.
- Turn the stove to medium high heat let it simmer. Do not stir the rice after this point, as the goal is to develop the socarrat—the crispy layer of rice at the bottom. Leave it for 10 minutes.
- When the liquid is reduced, lower the fire to medium-low until the rice has abosorbed all the liquid (approx. 10 mins more). Keep an eye on the pan to prevent burning.
- Resting: Once cooked, remove the pan from the heat and let the paella rest for a few minutes. This allows the flavors to meld and the socarrat to develop further.
- Serving: Serve the paella directly from the pan, offering lemon wedges on the side for a final burst of freshness and flavor.
