Mixed-Fruit Tartlets

Mixed Fruit TartletsPastry Cream


  • 500 ml Milk
  • 6 Egg yolks
  • 100 g Fine sugar
  • 50 g Plain flour (sifted)
  • 1 tsp Vanilla extract

Pastry Topping

Special Ingredients:

  • 1 can 850 g S&W Fiesta Fruit Cocktail
  • 1 can 425 g S&W Blueberries
  • 1 can 454 g S&W Dark Sweet Cherries


  • Buy the tart shells already cooked and ready to go
  • Boil the milk with the vanilla extract. Once boiled, leave it to cool for 10 minutes
  • Whisk egg yolks and sugar until the mixture turns foamy and then add the flour
  • Pour the milk over the yolk mixture. Mix well and pour back the contents into the boiling pot
  • Boil for 2-3 minutes, stirring constantly. The mixture should thicken
  • Remove from the pot and cool for half hour
  • Pipe the patry cream into the fruit tartlet shells about 3/4 ways full
  • Assemble S&W Fruit Cocktail, S&W Blueberries and S&W Dark Sweet Cherries on top
  • Chill or serve straight away
